It also contains good amounts of potassium, magnesium, and calcium.

You’ll get the most nutrients from raw spinach. But cooked spinach is still very nutritious and may be easier for your body to absorb some nutrients.

Choosing Fresh Spinach

Look for bright green leaves when picking spinach. Avoid wilted or yellowed leaves. Baby spinach is tender and good for salads. Mature spinach has larger, thicker leaves best for cooking.

Check the stems – they should be crisp, not limp. Smell the spinach to make sure it’s fresh. It should have a mild, green scent.

Pre-washed spinach is convenient but may not last as long. Whole leaf spinach keeps better but needs thorough washing before use.

Buy organic spinach when possible to avoid pesticides. One pound of fresh spinach will cook down to about 1 cup.

Preserving Spinach for Cooking

Wrap unwashed spinach in paper towels and store in a plastic bag in the fridge. It will keep for 3-5 days.

To freeze spinach, blanch it first. Dip in boiling water for 2 minutes, then plunge into ice water. Drain well and pack into freezer bags.
